Spinach, Artichoke, and Feta Quesadillas

This was really good. I didn't even use fresh spinach. I used frozen and thawed it out in the microwave, then squeezed it in the strainer to get all the water out. We just wanted to have a light lunch so we had this to snack on a Saturday afternoon.

Also good for an appetizer if you're having a few friends over.






Recipe from The Garden Grazer

Ingredients

Spinach, a couple large handfuls of fresh(I thawed and drained a package of frozen)
14 oz can artichoke hearts
3-4 green onions
Feta, crumbled
Shredded mozzarella
4 large tortillas (I used whole wheat)

Instructions

If using fresh spinach, roughly chop the spinach,  artichokes hearts, and dice the green onions.

In a pan over medium heat, place a tortilla and sprinkle with mozzarella and feta.

Add artichokes, green onion, and then spinach. Top with another layer of mozzarella and a tortilla.

Heat for a few minutes on each side or until cheese is melted.
