Lasagna Soup

For those of you that frequent this site you know my battle with making soup. Not just soup, but really good soup. I try and make it healthy and it ends up not turning out right. This one is different. It was so yummy I can't even tell you. I would definitely make this again, and if I had to take a dish to pass I would take a big batch of this instead of something like chili. You would think that it would taste like chili, but it doesn't. This really does taste like lasagna in a bowl.

Sprinkle a little fresh Parmesan and voila!!!!

Recipe from One Particular Kitchen

Ingredients

1lb turkey burger or ground beef, browned crumbled, and drained
2 tsp onion powder
2 tsp garlic powder
2 tsp Italian Seasoning or oregano
1 tsp salt
1 tbsp packed brown sugar
1 (32 oz) box chicken broth
2 (14.5 oz) cans petite diced tomatoes
1 (15 oz) can tomato sauce
2 cups bow tie pasta
1/2 cup Parmesan cheese, grated
2 cups Mozzarella cheese, shredded

Directions

Combine ground beef with tomato sauce in a slow cooker or pot; simmer for at least an hour or so to let the flavors work together, then stir in the Parmesan cheese.

If you're serving it all at once, add in pasta and simmer unitl noodles are cooked, about 10 minutes. Serve with Mozzarella cheese sprinkled over top.

NOTE: Pasta can be tricky to freeze and reheat. Freeze two cup portions of the soup, then when you're ready to eat put the contents of the jar and a handful of uncooked pasta in a small pot and cook until the noodles are done and the soup is hot.

Sounds tasty! It melds together a few of my favorites: lasagna, pasta with meat sauce, and tomato soup all in one bowl ! Perfect for a day like today where it is 20 degrees in Boston
