Cranberry White Chocolate Cookies

Some of Ryan's coworkers have a sweet tooth so I decided to whip up some cookies for them as a treat. Well let me rephrase that...I threw all the ingredients in my kitchen aid mixer and flipped the switch so the mixer would whip them up for me. I definitely had satisfied customers because he returned with an empty Tupperware container and a request for more cookies. Delicious!!!
Recipe from The Redhead Baker
Ingredients
1/2 cup unsalted butter, softened
1 1/3 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour (I use unbleached)
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1 1/2 cup white chocolate chips
4oz dried cranberries
Directions
Preheat the oven to 350 degrees. Line two cookie sheet pans wiht parchment paper.
Using a mixer cream the butter for a few minutes until light and fluffy. Gradually beat in the sugar.
Add the eggs one at a time, beating well and scraping down the bowl after each addition. Beat in the vanilla.
In a medium mixing bowl, stir together the flour, baking powder, salt and baking soda. Gradually add to the dough, mixing on low speed just until combined.
Gently stir in the white chocolate chips and the dried cranberries.
Scoop the cookie dough by the tablespoonful onto the parchment-lined cookie sheets. Bake for 10 to 12 minutes, just until the cookies begin to brown on the bottom. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool.
