Black Bean Quesadillas

This recipe was so awesome and easy! It's a great meatless weeknight meal when you don't have a lot of time. It also doesn't hurt that it has healthy ingredients in it like whole-wheat tortillas, avocado, and black beans. I came home one night from the gym and this was the meal I sat down to. Perfect post workout eats. We've had it multiple times since then and it's yummy every time!

If you've got kids that like eating with their hands, you can add small dippers if they like sour cream or salsa.


Recipe from Eating Well

Ingredients

1 15 ounce can black beans, rinsed
1/2 cup shredded Monterey Jack cheese
4 8-inch whole-wheat tortillas
2 teaspoons canola oil, divided
1 ripe avocado, diced
1/4 cup salsa of your choice

Directions

Combine beans, cheese, and 1/4 cup salsa in a medium bowl. Place tortillas on a work surface. Spread 1/2 cup filling on half of each tortilla. Fold tortillas in half, pressing gently to flatten.

Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, 2 to 4 minutes total. Transfer to a cutting board and tent with a foil to keep warm. Repeat with the remaining 1 teaspoon oil and quesadillas. Serve the quesadillas wiht avocado and the remaining salsa.

Love this course, it looks absolutely delicious! I have a weak spot for mexican style food, and I'll be sure to make this some time soon!
