Cabbage Soup

I know what you're thinking....and I'm not promoting the Cabbage Soup Diet. I was with one of my friends who eats tons of this soup this time of the year. I was talking to her on the phone while I was grocery shopping one day and I knew I had a cabbage to use at home already. So it only seemed right to make this since it's so easy and good for you.
When Ryan walked in he asked,"What's in the pot?". When I told him I got an awful look, but as always he said he would try it. His skepticism made me smile, because I knew that his tastebuds wouldn't be disappointed.
Well....as always, my friend Heather was right. Ryan was extremely surprised and the soup had so many more flavors going on than what was expected that the idea of bland cooked cabbage didn't even come to mind.
I used regular V-8 juice, but if you want to add a little bit of spice to it you could definitely use the spicy V-8 juice instead. The list below are obviously the veggies that I chose, but feel free to make this recipe your own. You could definitely add leeks, or green beans, or whatever you want to it.
Wonderful recipe packed with good healthy veggies.
1 head of cabbage, chopped
1 64 ounce bottle of V-8 Juice
5 green onions, diced
2 medium onions, diced
2 green peppers, diced
3 or 4 carrots, peeled and sliced
1 packet of Savory Herb and Garlic Lipton Onion Soup mix
1 clove garlic
1 12 oz package of sliced mushrooms
1 14oz can of stewed tomatoes Italian recipe with basil, garlic, and oregano
Directions
Put all ingredients in a big pot and let cook until vegetables are tender. Stirring occassionally.
